Grinch Egg Muffins

Serves: 10 muffins
- 1 - 2 tablespoons of olive oil
- 3 large eggs
- 2 handfuls of baby spinach
- 1 cup milk or non dairy milk of choice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon of flour (can use gluten free too)
- ½ teaspoon baking powder
- Fill ins of choice: cooked ground sausage, diced ham, cheese
- Black olive slices
- Banana
- Strawberries
- Preheat oven to 350 degrees.
- Dip a clean paper towel into olive oil and oil each well of a muffin baking tin.
- In a blender combine eggs, spinach, milk, salt and pepper.
- Blend until smooth.
- Add flour and baking powder and blend until combined.
- Place 1 large tablespoon of fill ins in 10 muffin wells.
- Fill muffin wells ⅔ full of spinach and egg mixture.
- Place in preheated oven and cook for 20-24 minutes.
- Remove from oven and cool 5 minutes.
- Using a small silicone spatula, gently glide spatula around the sides to release the muffins from the pan.
- Gently remove the muffins from the tin.
- Cut black olives in half and place on muffins as eyes and mouth.
- Use an end piece of black olive as the nose.
- Cut the ends off the end of a banana and slice it into thick slices.
- Remove the tops off of large strawberries.
- Stack the strawberry on top of the thick slice of banana and top with small end of banana.
- Place toothpick through the center to secure.
- Serve on top of the egg muffin.
