Grinch Egg Muffins

Merry Grinchmas! These Grinch Egg Muffins will have your kids loving breakfast in the morning!
Ingredients
  • 1 - 2 tablespoons of olive oil
  • 3 large eggs
  • 2 handfuls of baby spinach
  • 1 cup milk or non dairy milk of choice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon of flour (can use gluten free too)
  • ½ teaspoon baking powder
  • Fill ins of choice: cooked ground sausage, diced ham, cheese
  • Black olive slices
  • Banana
  • Strawberries
Instructions
  1. Preheat oven to 350 degrees.
  2. Dip a clean paper towel into olive oil and oil each well of a muffin baking tin.
  3. In a blender combine eggs, spinach, milk, salt and pepper.
  4. Blend until smooth.
  5. Add flour and baking powder and blend until combined.
  6. Place 1 large tablespoon of fill ins in 10 muffin wells.
  7. Fill muffin wells ⅔ full of spinach and egg mixture.
  8. Place in preheated oven and cook for 20-24 minutes.
  9. Remove from oven and cool 5 minutes.
  10. Using a small silicone spatula, gently glide spatula around the sides to release the muffins from the pan.
  11. Gently remove the muffins from the tin.
  12. Cut black olives in half and place on muffins as eyes and mouth.
  13. Use an end piece of black olive as the nose.
  14. Cut the ends off the end of a banana and slice it into thick slices.
  15. Remove the tops off of large strawberries.
  16. Stack the strawberry on top of the thick slice of banana and top with small end of banana.
  17. Place toothpick through the center to secure.
  18. Serve on top of the egg muffin.
