Banana Walnut Bread (Gluten Free / Dairy Free)

Who doesn't love a slice of homemade banana bread? This super moist bread is one you will make again and again.
  • 1 cup gluten free baking flour (I use Bob's Red Mill)
  • ¾ cup finely ground almond flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons ground chia seeds
  • ¾ cup light brown sugar
  • ⅓ cup canola oil
  • 1 teaspoon vanilla extract (gluten free)
  • 3 eggs
  • 3 ripe mashed bananas or 1½ cups of mashed bananas
  • ½ cup walnuts
  1. Preheat oven to 350 degrees.
  2. Line a 10 inch loaf pan with parchment or grease it well.
  3. Combine the flours, baking powder, ground chia, and salt.
  4. Add the brown sugar, whisking into the dry ingredients until well combined.
  5. In a separate bowl, combine the eggs, oil, vanilla extract and mashed bananas.
  6. Add the wet ingredients to the dry ingredients, combining with a rubber spatula until the flour is combined.
  7. Fold in walnuts.
  8. Pour into the loaf pan.
  9. Bake for 45-50 minutes.
