Banana Walnut Bread (Gluten Free / Dairy Free)

Serves: 1 loaf
- 1 cup gluten free baking flour (I use Bob's Red Mill)
- ¾ cup finely ground almond flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons ground chia seeds
- ¾ cup light brown sugar
- ⅓ cup canola oil
- 1 teaspoon vanilla extract (gluten free)
- 3 eggs
- 3 ripe mashed bananas or 1½ cups of mashed bananas
- ½ cup walnuts
- Preheat oven to 350 degrees.
- Line a 10 inch loaf pan with parchment or grease it well.
- Combine the flours, baking powder, ground chia, and salt.
- Add the brown sugar, whisking into the dry ingredients until well combined.
- In a separate bowl, combine the eggs, oil, vanilla extract and mashed bananas.
- Add the wet ingredients to the dry ingredients, combining with a rubber spatula until the flour is combined.
- Fold in walnuts.
- Pour into the loaf pan.
- Bake for 45-50 minutes.
