Meal Prep Bagelwiches

- 8 eggs
- 8 (3-1/2 inch diameter) waxed paper bakeware (looks like a small tart pan)
- Salt & Pepper
- 1 pack of thin sliced bagels (8 in a bag)
- 8 slices of cheese
- 8 slices of ham
- Preheat oven to 350 degrees.
- Place paper 8 tart cups on a large baking sheet.
- Spray each cup with oil, wiping up any puddles of oil.
- In a glass measuring cup, crack one egg at a time.
- Add a dash of salt and pepper to each egg and pour one at a time into each of the 8 cups.
- Bake for 8-10 minutes, being careful not to overbake.
- Remove from oven and let cool.
- Remove eggs from cups and set aside.
- Assemble bagelwich: bagel, egg, ham, and cheese.
- Wrap each bagelwich in waxed paper.
- Label and date 8 freezer bags.
- Place bagelwiches in the bags.
- Place in the freezer.
- When ready to eat, remove from freezer.
- Place in the microwave for 1 minute - 1 minute, 30 seconds.
