No Bake Peanut Butter Chocolate Chip Granola Bars

  • 1 cup crunchy natural peanut butter
  • ½ cup honey
  • 1 tsp. vanilla extract
  • 1 cup old fashioned oatmeal (use gluten free if desired)
  • 2 Tbsp ground chia seed
  • 2 Tbsp ground flax seed
  • ½ cup allergen friendly mini chocolate chips (dairy free, soy free, gluten free)
  1. Prepare a square pan with parchment paper & set aside.
  2. Mix wet ingredients together: peanut butter, honey, and vanilla in a large bowl
  3. Add dry ingredients: oatmeal, flax, chia, and chocolate chips.
  4. Mix dry into wet and combine well.
  5. Pour into square baking dish and press down.
  6. Sprinkle with 1-2 Tbsp of chocolate chips and press down firmly, using parchment paper. Refrigerate for at least 1 hour.
  7. Remove from fridge and cut into 10 bars.
  8. Share and enjoy!
