Salmon and Asparagus Foil Packs

Don't you love it when you find a meal that fits in one little pack? I do, so I am sharing my super easy Salmon & Asparagus foil packs! They are full of flavor, Omega 3's and veggies!
  • 2 packs ready to eat asparagus
  • 2 large fillets salmon or 4 small
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp extra virgin olive oil
  • 2 cloves fresh minced garlic
  • 4 lemon slices
  • salt and pepper to taste
  • 2 sheets of aluminum foil and parchment paper
  1. In a small bowl, combine balsamic vinegar, lemon juice, olive oil, and garlic. Set aside.
  2. Place a handful of asparagus in the middle of a sheet of parchment and aluminum foil.
  3. Place 1 tsp of vinegar mixture over top and toss.
  4. Add 1 salmon fillet on top of asparagus.
  5. Top with 1 tsp of mixture and sprinkle with salt & pepper.
  6. Add 2 lemon slices to the top.
  7. Make a tent and secure the seams.
  8. Repeat the above steps with second piece of salmon.
  9. Bake both foil packs at 350 degrees for 20 minutes.
  10. Serve and enjoy!
