Hey, Y’all! You are so sweet to stop by! My name is Betsy. I am a Southern born belle married to a military man that moves around the world about every 3 years. I am mom to the 2 most fabulous kids and crazy boxer pup. I am a registered dietitian with a masters in education in exercise science. I love to teach spin class and lifting weights is my therapy. I have lot going on in my life and wanted to share it through this site by using my name, BETSY. Keep reading to see what that means! Thanks bunches! XO
My Story
My story begins in Tennessee. I was born in Nashville and raised in the small town of Lewisburg. As a kid, I never stopped moving, unless I was asleep. My mom made a rule that I couldn’t stand on my head and watch TV as a kid or ‘Wonder Woman’ off the couch in her presence. I became intrigued by food when I was diagnosed with hypoglycemia in high school.
I majored in Dietetics at Lipscomb University and went on to complete an internship at Morehead State University in Kentucky. That is where I met my husband who is also a RD. He commissioned into the Air Force so we have been on the move ever since. Six states and two countries later, we have 2 kids and a very rambunctious boxer named Coco. You will probably see a lot of her around here since she likes to paw the computer out of my lap and replace it with her body.

Bright Ideas
I have so much going on in my life. I needed a place to express it. From crafts to fairy tales, I love sharing my creative ideas. All these things tend to come out in on my kitchen table, in recipes and nutrition education kits too.
Education/Homeschool
I am a new homeschool mom (never thought that would happen) to my 10 year old son with dyslexia & ADHD. Helping him has become a new passion of mine. It’s challenging but worth it in every way. Some may judge me for labeling him. I am not ashamed. Dyslexia & ADHD are part of who he is, and he is one amazing kid!
Travels
I just got back from living in Europe for 3 years. I’ve been to a ton of countries, and I cannot wait to share my exciting times with you!
Simple Nutrition
I have worked as a dietitian my entire career. I started out in the supermarket industry and have been blessed to expand my expertise in clinical, food service, sports nutrition, recipe development, food videos, and writing. I accented my degree and experience with a Masters in Education in Exercise Science.
Over the years, my approach to health really hasn’t changed. I like to keep things simple. Exercise and healthy eating are tough for a lot of people. Growing up in the land of ‘cream of something soup’ at every meal, I learned how to enjoy food and not judge others for their choices. Food and nutrition is really a matter of choice and management. It’s the management part I like to help with. Let’s be honest, y’all! You don’t diet to be healthy! You have to eat! I like to showcase healthy and delicious food that can fit into your life, not your diet. Check out my services if you would like to work with me.

Emma loves to craft, bake, & cook, not necessarily in that order. She aspires to be a chef, cupcake shoppe owner, and a teacher. She also loves pigs!
Coco
The Boxer
Demanding, yet incredibly cute, Coco makes it hard for anyone to get work done. She specializes in hugs, running, playing, and leaping like a deer. She is also referred to as The Puff.
Evan
Lego Builder & Gamer
Evan loves to build. He is an expert Lego builder. He has started collecting Halo Mega Blocks. Evan has traveled all over the world. He also loves spaghetti. Spaghetti is his favorite.
