It’s that time again, The Recipe Redux! This month we are whipping up dishes in our slow cookers or instant pots. I have not jumped on the instant pot train. I do love my trusty slow cooker.! It’s been somewhat dusty this summer, but this challenge made me dust it off and throw one of my favorite dishes together, Slow Cooker Herb Potatoes. Summer months are really hot where I live. I try not to turn on the oven that much. I usually grill, microwave, or cook on my stove top. I haven’t had my favorite potatoes in a while so I thought there would be no better way to keep my house cool than to make my potatoes in the slow cooker. It’s easy to make and easy to clean, plus it’s delicious!
- 1.5 lbs. variety of small potatoes
- 1 teaspoon kosher salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- 2½ tablespoons olive oil
- 2 garlic cloves, minced
- Place potatoes in the slow cooker.
- Add spices, oil, and garlic.
- Combine well.
- Cook on high 2.5-3 hours.
- Serve with Parmesan if desired.
You can serve these with some Parmesan if you wish for more flavor. My kids have to cheese everything, so there’s no choice in our home. If you like sweet potatoes instead, you may want to try my Sweet Potato Bake.

I have a love-hate relationship with roasted potatoes in the summer…I love making making them and they seem to go perfectly with most summer meals but I hate cranking up my oven to do so. This is such a great idea! I’ll have to try this soon!
