Summer is here! Break out the watermelon and enjoy this delicious Easy Watermelon Mango Salsa!
Hi, friends! It’s been a long time. Winter had a tight grip on me. This was my first winter living in the northern tier of the US, and it was C-O-L-D! I’m not talking 30 degrees either! I’m talking about (negative) – 65 degree wind chill cold. Elsa’s ice castle would have been a summer retreat!
I feel like Olaf singing about summer now! Bring it on! I am kicking off the first day by sharing my Easy Watermelon Mango Salsa.
I first made this delicious watermelon mango salsa and shared with it my friends at the National Military Family Association for Memorial Day a few years ago. It pairs wonderfully with chips or with fish, shrimp, or chicken.
Let’s talk about the easy part of this salsa! It only has 5 delicious ingredients.
Watermelon
Watermelon is such a hydrating food for hot summers! Did you know it has more lycopene that any other fruit or vegetable? Lycopene is a strong antioxidant that can protect you from chronic disease.
Mango
Mango packs a Vitamin C punch by supplying 100% of your daily needs in just one cup! It also will give you 35% of your daily Vitamin A.
Cilantro
Cilantro is an herb your either love or hate. I personally love it! It adds great flavor and adds some Vitamin A, folate, Vitamin K, and Vitamin C, to your dish.
Jalapeno
Do you know that jalapenos can boost your metabolism? The capsaicin compound in the jalapenos has been shown in some studies to boost it by 4-5%.
Lime
Low in calorie and packed with flavor, limes provide Vitamin C and small amounts of other nutrients.
- 2 cups of watermelon, cubed
- 2 mangoes, cubed
- 2 tablespoons, chopped cilantro
- 1 small jalapeno, finely diced
- 1 lime, juiced
- salt to taste
- Add cubed watermelon and mango into a medium sized bowl.
- Add cilantro, jalapeno, and lime.
- Salt to taste and toss gently.
