Simple Roasted Sweet Potatoes are a perfect meal prep recipe! Make once and eat two or three times during the week!
Why do we make food so complicated? Side dishes can be a pain on nights I am busy. Most of the time I over complicate it in my head. Side dishes don’t need to be complicated to be delicious. I love these Simple Roasted Sweet Potatoes because they can be prepped at the beginning of the week to be reheated and used later on. As much as I love baked sweet potatoes, these are more versatile. They make a perfect afternoon snack as well! These also make the perfect finger foods for little hands if you have small children.
Nutrition Benefits of Sweet Potatoes
If I had to make a choice between a regular potato and a sweet potato, it will always be the sweet potato that wins! As for nutrition, they are both excellent choices. Sweet potatoes just have loads more beta carotene which helps improve Vitamin A levels in the body.
Sweet potatoes are considered a complex carbohydrate, but provide a good amount of fiber. 1 medium sweet potato has about 4 grams of fiber, and contain both soluble and insoluble fiber.
Sweet potatoes also contain manganese, Vitamin C, potassium, and Vitamin B6.
Prepping Your Sweet Potatoes
All you need are 2 medium sweet potatoes, a cutting board, and a good chef’s knife. I wash and peel each potato, then slice and dice into 1/2 inch cubes.
I toss them in about 2-3 tablespoons of olive oil and add some salt and pepper. See, I told you, this is simple.
Roasting Your Potatoes
Place your potatoes in a 400 degree preheated oven. Put a timer on for 15 minutes because you will need to toss them around with a spatula, and then continue to roast for an additional 15 minutes.
- 2 medium sweet potatoes
- 3 Tablespoons olive oil
- Salt and pepper to taste
- Preheat oven to 400 degrees.
- Peel and wash the potatoes.
- Slice potatoes into ½ inch slices and then cut into ½ inch cubes.
- Place in medium bowl and toss with olive oil, salt, and pepper.
- Place on cookie sheet lined with parchment paper. Make sure potatoes are in a single layer.
- Roast for 15 minutes. Pull out of the oven and toss with a spatula.
- Put potatoes back in the oven for an additional 15 minutes.
- Remove from oven and let cool.
Ways to Use Simple Roasted Sweet Potatoes
I adore using them in, what I call my favorite recipe of the year, Warm Kale Salad with Sweet Potatoes, Cranberries and Pecans. I make this about every 2 weeks, and I don’t share it!
Use them as a simple side to go with lunch or dinner.
Serve them with fried eggs for breakfast.
Warm them up and snack on them. It’s the perfect size for kids.
