I love avocado EVERYTHING, but this Avocado Chocolate Pudding is one of my very fave desserts! It doesn’t take much to satisfy your sweet tooth with this one! It’s rich and decadent!
It’s February and it’ time to talk chocolate! Am I right? From a nutritional standpoint, chocolate and avocado have a ton of health benefits. Let’s break down why pairing these two foods together is good idea.
CHOCOLATE BENEFITS
May help improve your brain function
May lower blood pressure by improving blood flow and help reduce heart disease risk
Raises your good cholesterol (HDL)
May help protect against sun damage
These aren’t promises but they are been seen in studies.
AVOCADO BENEFITS
Can aid in weight loss by helping you feel fuller longer
May help reduce side effects of chemotherapy and inhibit growth of cancer, specifically prostate
Important for eye health due to their lutein and zeaxanthin content
May aid in symptoms of osteoarthritis
May decrease risk for heart disease
So to help decrease added sugars, which is only a tablespoon of agave, I added half of a ripe banana. It truly does mesh well with all the flavors and your are getting even more potassium for dessert! If you usually have ripe bananas laying around, this is a good way to use them up. You can also make my Banana Walnut Bread (gluten/dairy free) if you have any more leftover.
- 1 ripe avocado
- ½ ripe banana
- ½ teaspoon vanilla extract
- 4 Tablespoons cocoa powder
- 1 Tablespoon agave nectar
- 2 Tablespoons coffee
- 1 Tablespoon non dairy milk
- Coconut cream whip and raspberries, optional
- Place all ingredients in a food processor or blender and blend until creamy and smooth.
- Place in 2 - 4 oz cups.
- Top with Coconut cream whip (I use So Delicious Coco Whip) and fresh raspberries if desired.
