Spring is the time where I get really excited about fruits and vegetables! Their rainbow of color represents antioxidants, vitamins and minerals that can fuel my body. Sometimes, fruits and veggies get a lot of fuss surrounding them. I personally don’t get it because I could eat a vat of them and be completely happy. I do have one child who doesn’t feel like me, so I understand people can have a hard time. Rainbows make everyone happy, so I wanted to shine some light on different ways to eat the rainbow and encourage you to dig in to all those delicious nutrients that can help protect from disease!

March is also National Nutrition Month, so I enlisted the help of my dietitian friends to help me out! Check out all their delicious ways to eat the rainbow!
